Production Notes
A blend of whole-cluster pressed and saignee wines from our Estate and Paper Street Vineyards. Juice was cold-settled and fermented cool in stainless steel. No malolactic acid fermentation. Bottled after 4 months elevage in neutral 400-liter puncheons and stainless steel tank.
