2023 Sel De La Terre
Sel de la Terre, meaning "Salt of the Earth", was created in dedication to Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Paper Street and our own Estate Vineyards. This is the masculine counterpart to L’Ange Rouge.

Tasting Notes
Explosive fruit-forward aromatics are confirmed on the palate. The intensely deep, rich color is a testament to the superb, even-ripening season. Truly a Grenache vintage for the ages! The Estate Vineyard imparts a foundational core of salty, and savory, while Paper Street’s notorious freshness, and juicy minerality enlivens the finish. Production Notes
40% whole cluster fermented in concrete tanks and small, open-top bins, spending between 20-45 days on the skins with a combination of pump-overs and punch-downs during cold soak and fermentation. Aged 16 months in neutral 500-liter puncheons and large concrete tanks.
