2022 Sel de la Terre
Sel de la Terre, meaning "Salt of the Earth", was created in dedication to Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Paper Street and our own Estate Vineyards. This is the masculine counterpart to L’Ange Rouge.

Tasting Notes
Black raspberry, early season blueberries, mulberries, dragonfruit, melted licorice, mountain lilac, tea, roasted chicory, chalk dust. Generous fruit, opulent, and mouthwateringly juicy. Finishes in a crescendo of refreshing minerality, with a gamey note in the background.

Production Notes
10% whole cluster fermented in small, open-top bins and concrete tanks, and spending between 20-40 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in neutral 500-liter puncheons.
