Paso Robles is known for its fantastic climate for growing Rhône's and Cabernet Sauvignon, and this is a blend of our Estate Vineyard, Paper Street, and Armory. The Cab, Syrah, and Petit Verdot coming off of these vineyards are too good to do anything other than their own bottling, which is why it is a Fait Accompli.

Tasting Notes
Sugar-dusted black currants, bing cherry, raspberry puree, roasted plums, lilac, birch beer, sweet olive, black pepper crusted beef carpaccio, eucalyptus pollen, toffee, Mexican hot chocolate, espresso beans. Palate approaches soft and supple, but firms with fine-grained tannins, and finishes juicy, with a taught mineral coil

Production Notes
Syrah component saw some whole cluster and concrete tank fermentation, Bordeaux varietals were destemmed, and fermented in stainless steel tanks, and small, open top bins, spending between 20-40 days on skins, with a combination of pump overs and punchdowns during cold soak and fermentation. Aged 20 months in French oak 265-liter and 225-liter barriques, 55% of which were new. 10% whole cluster across the blend.
