2021 Sel de la Terre
Sel de la Terre, meaning "Salt of the Earth", was created in dedication to Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Paper Street and our own Estate Vineyards. This is the masculine counterpart to L’Ange Rouge.
Vinification
30% whole cluster fermented in small, open-top bins and concrete tanks, and spending between 20-40 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in neutral 500-liter puncheons.2019 Scored

95 Points, Robert Parker - The 2021 Grenache Sel de la Terre was vinified with 30% whole clusters and matured in concrete and used puncheons. It has deep aromas of cranberry, black cherry, salami, tobacco and Angostura bitters. The full-bodied palate features highly concentrated, nuanced fruit yet is light on its feet, with chalky tannins and fireworks of fresh acidity. It has a long, nuanced finish with a flourish of spicy accents, and although it's lovely now, it will gain complexity in bottle over the decade or more.
