2021 Sel de la Terre
Sel de la Terre, meaning "Salt of the Earth", was created in dedication to Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Paper Street and our own Estate Vineyards. This is the masculine counterpart to L’Ange Rouge.
30% whole cluster fermented in small, open-top bins and concrete tanks, and spending between 20-40 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in neutral 500-liter puncheons.
Rose petals, dragonfruit, strawberry-guava, raspberry sorbet, salted cherry blossoms, pomegranate molasses, chalk dust. The palate is juicy, tactile, lively, mineral-laced, and exuberantly long.
