2021 Accoutrements
Accoutrements was a revelatory, lightning-in-bottle moment. While blending some of our most popular wines, we had a cellar epiphany: our unsung heroes, our blending varietals, consistently impress, and deserve their own center-stage showcase. I said to Adrian, “We should make wine with these unsung heroes, these accoutrements. What should we call it?” Adrian replied, “That’s it! It’s Accoutrements!”
Vinification:
Components were destemmed and fermented separately in stainless steel and small, open-top bins, spending between 20-25 days on the skins, with a combination of pump-overs and punch-downs during cold soak and fermentation. Aged 22 months in neutral 265 & 228-liter French oak barriques.
Tasting Notes:
Blueberry syrup, elderberry compote, black currant, fresh black mission fig, creosote, and menthol. The palate is intensely fresh and vibrant, unexpectedly seamless, polished, cohesive, and generous given the strong personalities of these polarizing varietals.
