2019 Sel de la Terre Magnum
Sel de la Terre, meaning "Salt of the Earth," was created in dedication to Mac's grandfather. This Westside Paso, 100% Grenache, is a combination of fruit from Paper Street and our own Estate Vineyards. This is the masculine counterpart to L’Ange Rouge.

Tasting Notes
Aromatics: The nose is vibrant and inviting, featuring notes of passion fruit, black cherry, candied lavender, and purple flowers, complemented by hints of chalk dust, elderberry, and cranberry relish.
Palate: The palate is broad and expansive, showcasing rich dark fruit flavors, cherry cobbler, and a spicy mineral character, alongside undertones of cola and licorice. The finish is sweet and floral, with a lingering quality that is supported by finely integrated, subtle tannins.

Production Notes
30% whole cluster fermented in small, open-top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in neutral 500-liter puncheons and 4 months in stainless steel before bottling.
