2018 Sel de la Terre Magnum
Sel de la Terre, meaning "Salt of the Earth", was created in dedication of Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Paper Street and our own Estate Vineyards. This is the masculine counterpart to L’Ange Rouge.

Tasting Notes
Aromatics: Passion fruit, black cherry, candied lavender, purple flowers, chalk dust, elderberry, and cranberry relish. Palate: broad, expansive, dark fruit, cherry cobbler, spicy mineral, cola, and licorice. Sweet, floral, and long finish with long grain subtle tannin.

Production Notes
25% whole cluster fermented in small, open-top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in neutral 500-liter puncheons and 4 months in stainless steel prior to bottling.
