
2017 Sel de la Terre Magnum
Sel de la Terre, meaning "Salt of the Earth", was created in dedication of Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Shadow Canyon, Luna Matta, and Paper Street Vineyards. This is the masculine counterpart to L’Ange Rouge.
VINIFICATION
20% whole cluster fermented in small, open-top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 18 months in neutral 500-liter puncheons.
TASTING NOTES
Dragon fruit flower, Rainer cherries, kirsch, guava nectar, saltwater taffy, quince paste, transitioning into mint, chalk, and savory tobacco, while maintaining plush, pliant, accessible texture.
