
2015 Sel de la Terre
Sel de la Terre, meaning "Salt of the Earth", was created in dedication of Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Luna Matta, Shadow Canyon, and Paper Street Vineyards, as well as our estate. This is the masculine counterpart to L’Ange Rouge.
VINIFICATION
90% whole cluster fermented in small, open top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 19 months in neutral 500-liter puncheons and 350-liter cognacs.
TASTING NOTES
Cherry, mulberry, cranberry, Indian spices, fresh sage, and oolong tea. The aromatics are high toned and lifted on the palate. The wine leads with its fruit components; lively, energetic, and crescendos to a mineral, savory finish.
