
2014 Sel de la Terre
Sel de la Terre, meaning "Salt of the Earth", was created in dedication of Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Luna Matta, and Shadow Canyon Vineyards.
VINIFICATION
75% whole cluster fermented in small, open top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in neutral 500-liter 2nd and 3rd fill puncheons.
TASTING NOTES
Plum, black cherries, lavender, smoked salt, brown spice, miso. The palate is full of energy and tension that pulls all the flavors to the finish for a complex experience.
