
2013 Sel de la Terre Magnum
Sel de la Terre, meaning "Salt of the Earth", was created in the dedication of Mac's grandfather. This Westside Paso 100% Grenache is a combination of fruit from Luna Matta, and Shadow Canyon Vineyards.
VINIFICATION
60% whole cluster fermented in small, open top bins, and spent 15-20 days on skins with pump-overs during cold soak and punch downs during fermentation. Aged 16 months in 500-liter 2nd and 3rd fill puncheons.
TASTING NOTES
Kirsch, chalk, saline, rose petal, dark chocolate, briny, brown spices, fennel frond, leather, black cherry, silky persistent and round finish.
